The Joy of baking during the pandemic.

With more people staying at home, families are back in their kitchen making their own bread and more delightful treats.

So here’s one of my personal easy Focaccia Bread recipe with less kneading time and more the kitchen fun!

Ingredients:

  • FOR THE DOUGH:
  • 2  ½ cups all-purpose flour/ strong bread flour
  • 1 cup flour for dusting and kneading
  • 1 tablespoon dried yeast
  • 5 small potatoes/ 2 ½ potatoes
  • salt/ sea salt
  • freshly ground black pepper
  • olive oil
  • extra virgin olive oil
  • 1 tsp sugar (for activating the dry yeast)
  • 3 tbsp sugar ( for the dought)
  • FOR THE TOPPING:
  • olive oil
  • 4 sprigs of fresh rosemary, leaves picked

Method

  1. Preheat the oven for 350ºF while working on the recipe.
  2. With skin on, bring to boil potatoes. Once cooked peel and mashed potato then set aside.
  3. Activate your dry yeast by diluting it in lukewarm water and a tsp. of sugar then leave in a warm counter (room temperature) area.
  4. Meanwhile, using a food processor, put the mashed potato in then add ½ c  flour at a time.
  5. Once the yeast is bubbly and activated, by making a well in the middle combine remaining half flour with salt and the remaining 3 tbsp of sugar in a large bowl. continuously stirring,bringing in the flour mixture in the food processor with mashed potato as you go to form a dough.
  6. Prepare a flour-dusted surface for your dough.
  7. Transfer the dough to your working table and knead for about 3 minutes, or until smooth and springy. 
  8. In a large bowl grease lightly all over using extra olive oil. Place the dough in and lightly brush the top of the dough with more olive oil.  cover with a damp tea towel or a saran wrap and leave to prove in a warm place for 2 hours or until doubled in size.
  9. Once the dough has risen, work in your dough by kneading it, in between kneading add a tbsp of olive oil at a time by knocking it back with your fist making a well and spreading it out evenly for about 3 times.
  10. In a large baking tray drizzle lightly an olive oil all oven then add your dough in
  11. Use 2-4 fingers to push down into the dough to make lots of little air holes or wells and add a bunch of rosemary on top. Bake in a preheated oven for 25 to 30 minutes, or until golden and crisp at the bottom and cooked through. Leave to cool slightly, best serve with extra virgin olive oil or a mixture of extra virgin olive oil, balsamic vinegar, and grated or shaved parmesan.
